Now, I'm not the first to come up with this idea of coleslaw on a sandwich, but here's my take on it.
Take a handful or two of a packaged, already shredded cabbage/coleslaw blend and mix it with Marchetti's coleslaw dressing. You want all the cabbage to be coated, but not swimming in dressing. Use sparingly. Now set that aside.
Flip on the broiler and lightly toast one side of two pieces of whole wheat or rye bread. (of course, you'll need more for multiple sandwiches. Lol!) Take them out and and flip them over. Now add several slices of corned beef, topping on side with a slice of provolone cheese. Broil until the cheese melts.
Flip the corned beef from one side on top of the other side. Spread Russian dressing on the bare toast. (To make Russian dressing, mix equal parts mayo and ketchup.) Now add coleslaw, assemble your sandwich and you're good to go. :-)
